The young CUARTETO of Casajuan consists of 100% Tempranillo, 30 days fermented in carbonic maceration, later carefully treaded. The cider is than stirred, very carefully, so that none of the aromas escape, maintaining the process as homogeneous as possible. In March the CUARTETO will than, under strict control, be decanted and bottled. CASA-JUAN has specialized in prolonged fermentation. This way a wine like the SONETO emerges, a highlight of the Casjuan, with up to 60days of fermentation and subsequent months of maturing in new casks of American Oak.
